Ahhhhh...this has been one of those lazy weekends. I've been getting over a yucky case of strep and haven't felt like getting out with my germy self, but I knew it was time to put the head chef hat back on and figure something out to feed these folks. (Super Bowl Sunday and all that, you know? Thought I should make an effort.)
Pinterest to the rescue... a few Instant Pot recipes came across my feed today and one of them caused me to pause enough to think --- "Hey. I think we've got most of this stuff." Winner winner -- Instant Pot Cheeseburger Mac Dinner! As an added bonus, the recipe had thyme in it... hmmm. My little sister sent me an article this week that said thyme and strep are not friends ------- or words to that effect. SOLD.
So, the recipe. I had to sub out a LOT more than I expected, but it turned out very well. They gobbled it up and deemed it delicious. The hubby told me it was "goulash." I had no idea. Anyway, my Instant Pot Mini Duo and I are quite the team -- and no one went hungry. Yay. :)
Here's the FoodySchmoody's blog recipe that saved me today - and down below I've added my changes. (Remember, I've been sick. I guess we really were out of everything!)
I didn't have an onion.
I used Paula Deen Silly Salt instead of regular salt because, well, I like that salt.
I didn't measure the pepper, but gave it 7-8 good shakes.
I made SURE to get that thyme in -- and them I sprinkled in just a dab more.
I didn't have any beef broth, but water worked.
I added 2 T. of McCormick Montreal Steak Seasoning to make up for the beef broth.
I subbed 7 wedges of Laughing Cow Pepper Jack for the cheddar. And, I found about a cup of mozzarella to throw over the top. It worked.
My macaroni was closer to 10 oz.
Still.
It fed the masses...well, us... and it was good.... filled our tummies, made the house smell yummy, and gave me one more Instant Pot Mini Duo success! (Oh, how I'm growing to love that little pot! I'm digging the whole Strega Nona vibe, too.)
May the strep and flu stay far away from you. (Yes, I blew three kisses.) It's what Strega Nona would do.
